Blondies - Chewy Caramel Goodness

This year for Lent, I decided to give up chocolate again. On the whole it was fine, but a lot of the snacks we have in our house have chocolate on them. I was in the mood for baking one day, and I found a recipe for blondies. Blondies are basically a more caramel/white chocolate version of the traditional brownie. I found a recipe that was more caramel based, and gave it a go. I didn't have all the exact ingredients, but what I ended up with, I really enjoyed. It was so delicious, I had to share the recipe!


Ingredients
  • 112g unsalted butter
  • 220g of soft light brown sugar
  • 1 egg
  • 1 tsp vanilla bean paste (vanilla extract will also work)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 128 g plain flour
Method
  1. Preheat the oven to 175 degrees Celsius/160 Fan. 
  2. Line a tin with baking paper, I used a 20cm square tin
  3. Melt the butter, and then mix in the sugar and the rest of the wet ingredients
  4. Mix in your dry ingredients, it is quite a thick mixture
  5. Pour into the tin and spread as best you can. Don't worry if it doesn't go all the way to the edges, it wills spread out when baking. 
  6. Bake for 25-30 minutes or until a skewer comes out clean. Allow to cool for about 10-15 minutes. Cut into squares and enjoy!

I've made this for my family yesterday and they absolutely loved it! It really is delicious and a great alternative for brownies. It will also make your kitchen smell amazing!

  4. These look so good! I gave up YouTube for Lent this year, but I can't imagine giving up chocolate! I have a lot of time to bake this summer, so I will definitely be making these at some point.
