Smoothie Time: Berry Burst Smoothie Bowl

Although autumn suddenly hit the UK, and I found myself wearing my slightly thicker pink coat to work, there is still a little bit of summer in the air. I still love creating and writing up new smoothie recipes even into the cooler months! However, it came to a point where I had made a lot of standard fruit inspired smoothies/smoothie bowls, so I went to one of the blogging groups and asked what are people's favourite smoothie combinations, to get some inspiration! This recipe is a blueberry-strawberry smoothie bowl, inspired by the suggestion from Daisy, who blogs at Daisarella! This was a really yummy smoothie bowl, so if you try it out, let me know!

Now this was quite a thick smoothie bowl, but that was purely down to the yogurt. I had wanted to get Alpro's strawberry yogurt (I like to make all my smoothie bowls plant-based so everyone should be able to enjoy them), but unfortunately none of the supermarkets near me had it, but Sainsbury's did have Alpro's Go On Strawberry Raspberry Protein yogurt. Now this is thicker than 'normal' yoghurt (dairy or plant-based), so it did then make the texture of the smoothie bowl.

So if you prefer a less thicker bowl, just use regular yogurt.

Ingredients
  • 1 frozen banana
  • 1 cup of frozen blueberries
  • 1/2 cup of coconut milk (almond milk would also work great)
  • 1 tablespoon(ish) golden syrup (adjust to taste)
  • 2-3 tablespoons of Alpro Go On Strawberry Raspberry
Method
  1. Pour in the coconut milk, or whatever liquid you want to use
  2. Measure out and put all your frozen fruit into your blender, I use a Magimix
  3. Add in the yogurt, then add the golden syrup
  4. Blend! (You want it all to be combined and smooth - timings might be different depending on the strength of your blender)
  5. Pour into a bowl and top with whatever you like! I topped mine with banana, chia seeds, and granola and some strawberries!
This was an absolutely delicious smoothie bowl to eat, and kept me satisfied all the way to lunch - no snacks needed! I am always looking for smoothie inspirations, so if you have any particular fave combinations (for regular smoothies as well as smoothie bowls), please let me know!

Again, I hope if anyone tries it, likes it. Finally, a little message to my co-worker Diana - I promise I used proper Alpro. No one else will get that, but oh well!

Ellyn xx
