Smoothie Time: Summer Days Smoothie Bowl

Summer is here and I cannot wait to start making more smoothie bowls and experimenting with new flavours. Recently I have been inspired by Andrea from Earthy Andy's Instagram, if you are a fan of smoothie bowls and healthy eating, you need to check her out! I had been playing around with one of her Blueberry Storm recipe (you can see here) and it has helped me find the perfect base for smoothie bowls. Now it is a combination of Andrea's and Dzung from Honeysuckle. This recipe is loosely inspired by summer desserts, with the flavours of mixed berries, vanilla and golden syrup. One of my favourite easy desserts to have is chopped up mixed berries, chia seeds in a bowl drizzled in golden syrup.
There is a slight tartness to this thanks to the berries but it is in a good way - don't worry, it's not like you've stuck your mouth on a lemon!

Ingredients
  • 1 frozen banana
  • 1 cup of frozen summer fruits (The one I use included Raspberries, Blackberries, Blackcurrants & Redcurrants)
  • 1/2 cup of coconut milk
  • 1 tablespoon(ish) golden syrup
  • 2-3 tablespoons of vanilla yoghurt (I used Alpro Vanilla yoghurt alternative to keep it plant-based)
Method
  1. Measure out and put all your frozen fruit into your blender, for this recipe I used a Magimix as I found its a bit stronger than the Nutribullet I normally use
  2. Add in the yoghurt, then add the golden syrup
  3. Pour in the coconut milk or whatever plant-based milk you prefer
  4. Blend! (It will take about a minute or two to blend)
  5. You should end up with a gorgeous creamy finish, almost like ice cream that is starting to melt
  6. Pour into a bowl and top with whatever you like! I topped mine with banana, chia seeds, granola and a final drizzle of golden syrup
I had this for breakfast on Saturday and Sunday and it was absolutely delicious and a great start to each morning. If you try this recipe, I would love to see them so tag me on social media!

  1. I loveeee smooothie bowls! Back in America, there's this smoothie bowl in my hometown called PlayaBowls, and they make THE. BEST. smoothie bowls ever! I love that they're so easy to make at home as well. I always load mine with bananas, chia seeds, and honey.
