Autumn Treats - Cinnamon Cake

I love all things cake, making, eating and of course, The Great British Bake Off. I recently did a cake baking course which was really good, and I made the best cakes I've ever made. I'm still in the cake-baking mood and ever since finishing the course, I've wanted to start experimenting and trying new flavours. Cinnamon is one of my favourite flavours, and it screams autumn. So I decided to make a cinnamon cake. I also swapped out regular caster sugar for golden, to add a nice buttery flavour to go along with it.


Sponge

225g soft unsalted butter
225g self raising flour
225g golden caster sugar
4 eggs
½ to 1tsp of ground cinnamon
½ tsp of vanilla extract

Icing

25g soft unsalted butter
150g icing sugar
Ground cinnamon
1-3 tsp of milk
Extra icing sugar to decorate

Method

1. Preheat the oven to 180℃ (Fan)
2. Line the bottom of two 20cm sandwich tins with some greaseproof paper. Grease the sides with a little butter
3. Cream the butter and caster sugar together until all the sugar has dissolved, and the mixture is light and fluffy. It should easily drop of the spoon, and look like whipped cream.
4. Add one egg at a time and beat well in between
5. Sieve the flour and cinnamon and gently fold into the mixture until combined. You don’t want to knock out all the air so go slowly and gently
6. Split the mixture into the two tins, and bake for 25-30 minutes. Your cake will be done if it springs back, or if you stick a skewer into the middle of the cake and it comes out clean
7. Once cooked, leave to cool in the tins until the tins are no longer too hot to touch, then gently turn out the cake, and leave to cool completely on a cooling rack
8. To create icing, sieve 150g icing sugar into a small bowl and mix in the butter. If you need to, add some milk. Do a teaspoon at a time, mixing well in between. Once your buttercream is ready, add some more cinnamon to taste. If the mixture is too runny, add some more icing sugar
9. Whichever sponge is going to be the bottom layer, trim some of the top off to make a flat surface to spread the buttercream onto. Spoon the icing on top of the cake and spread with a palette knife. 10. Gently put the other sponge on top of the cake.
 11. Mix some icing sugar with cinnamon and sieve on top of the cake. You could substitute the icing sugar for more caster sugar if you want more of a crunchy top. 

Serve with your favourite hot drink and enjoy!
