Smoothie Time: Blueberry Glow

Now it is finally starting to get a bit warmer (for the moment at least), I am so excited to get back into smoothie bowls. The hardest part of a smoothie bowl is getting the right consistency. I've written a few smoothie bowl recipes on the blog but I would still say none of them had the completely perfect texture, they were good, but not perfect. Back in January I tried a green smoothie bowl recipe by Honeysuckle on YouTube and the texture was bang on. So I thought, can I use the basic measurements and some of the ingredients from that smoothie bowl, and make another? Well, I tried it and it worked out pretty good! I decided to use a recipe from Madeline Shaw's Get The Glow and then add in a few ingredients from the green smoothie bowl.




Now unfortunately the avocado I was using was not quite ripe enough but it worked out fine, the texture was not quite as creamy as the original green smoothie bowl but it was definitely thicker than a traditional smoothie.

This recipe is also vegan!

Ingredients
  • 1 frozen banana
  • 1/2 cup./64g of frozen blueberries
  • Half a ripe avocado
  • 1 tablespoon golden syrup
  • 1 teaspoon chia seeds (and more for decoration)
  • 1/2 cup/120 ml of Almond milk
Method
  1. Measure out all your ingredients - this means the frozen fruit has less time out in the open so it does not start to defrost
  2. Slice a ripe avocado in half, de-stone and add one half to the blender. If you are making this for more than one person, just add the whole avocado
  3. Add in the rest of the fruits, then add the golden syrup and chia seeds.
  4. Pour in the almond milk or whatever plant-based milk you prefer
  5. Blend! (It may take a few seconds to get going because of all the frozen fruit)
  6. You should end up with a gorgeous creamy finish, almost like ice cream that is starting to melt
  7. Pour into a bowl and top with whatever you like! I topped mine with some more frozen blueberries, half a fresh banana and a sprinkle of chia seeds and granola.
This was such a yummy breakfast and I will definitely be making this a lot more over the warmer months. If you try out this recipe, let me know! What is your favourite breakfast to make when its a bit warmer!

  1. I'm going to try this recipe out tomorrow, except I'll probably sub out the golden syrup because for me when I use frozen bananas that ends up being sweet enough for me :)
