Smoothie Time: A Dairy-Free Rainbow Fruit Smoothie

I have always loved making smoothies. I hate fizzy drinks and having smoothies for me, meant that I could have a drink that was a little more exciting then just water or juice! I used to just chuck in whatever fruit we had with some juice and yoghurt.. well, frubes! Nowadays I tend to think about what flavours I want in my smoothies and I love seeing what colours my smoothies turn out. The other day, my youngest sister and I made a really delicious smoothie and I wanted to share it! The smoothie is dairy-free but not 100% vegan as it does contain honey but you could just leave that out! This makes about 750ml and serves 2.


Ingredients
  • 1 apple (I have only used red apples so far)
  • 1 banana
  • 1 kiwi
  • A handful of frozen strawberries and blueberries
  • Honey
  • Coconut milk
  • Water
Method
  1. Peel the kiwi and banana and then chop them up into smaller chunks so it is easier to blend; Cut up the apple into chunks and remove the core - you can buy apple corers which make it super easy!
  2. Put the fruit into the blender and then pour in about a handful of frozen strawberries and blueberries
  3. Put in two squeezes of honey - which I think is about two tablespoons
  4. I poured in some coconut milk about half way up to the 'Max' line on the large NutriBullet cup and then the rest with water. Again, I am not sure how much this but it might be about 300ml
  5. Place the blender lid on and blend blend blend!
  6. Pour into a glass and enjoy!
